Can someone please point me in the right direction (Forum or otherwise)
I'm contemplating turning my ZXR 750 (1994) into a naked sports bike.
Is there anywhere where I can get a list of available parts, parts I'll need etc. from around the Melbourne area.
Any help would be grande.

you need to check out places like Austreetfighter etc. There is a heap of different stuff you can buy, but not a 'list' as such, streetfighters are a really personal expression, so its really up to you what you buy and fit to your rig.
Check out RAPID bikes as well for ideas, etc. Good luck - if you can post some pictures that would be great !

but i reckon trial and error mixed with a little imagination will get you there. if you want some ideas just have a look around at some picstures of other peoples bikes or even better, check some out in person.
but to your bike... it should be VERY similar to mine, off the top of my head:
-you'll need to organise a new coolant overflow bottle, i have a pub squash bottle under my seat where the tool box would go. not perfect, but it works.
-you will have some faring mounts hanging off your motor, its unavoidable, they're a part of the side covers.
-most cheaper headlight mounts are made for conventional forks, before you buy anything make sure they'll fit your forks.
-buy a digital dash, it'll save farking around trying to make the standard one look reasonable, at $200ish, its money well spent i think.
-you're gunna have a bit of fun getting the MX bar mounts right (make sure you have enuff clearance in between them to do up the top triple bolt and you may need to cut the mount bolts down so they dont scrape your frame).
-with mx bars, your throttle, clutch and choke cables will reach (just) but your brakes wont, you can get a new longer section made up at an auto brake shop for around $50 or buy a set of longer braided lines.

-wind is a bitch at 200kph
-streetfightered bikes look hell cool

however i have noticed on a naked/fighter ..that once u get to abt 130+, the wind factor makes things seem like 200kph anyway...
