If you buy the duty free once you have past customs you should be fine as the bag is sealed with regards to liquids, unless of course you have unsealed it. Whilst there is a limit of how much you can bring in to Oz unless it is above what is considered personal consumption and you are upfront about it you should get through without paying a fine or duties.

I have in the last 10 years come back through customs about 8 times with over the limit quantities of alcohol(in one case I had 12 bottles of red from South Africa) but I declared that I was over the limit and declared everything that I thought may need to be checked, like food, wood products etc. Every time I was told it was fine, only in one instance I had some food (a type of fruit) confiscated as it was a prohibited product but no fine or other issues. On one occasion I was in the declaration line when a customs officer came up to me asked what I had to declare, I told them and she said don't worry on your way sir without even scanning my bags, admittedly that was 8 years ago in that instance.

Don't hide it, be honest and polite and you should have no issues.

Ooh and check out the duty free limit going into NZ it's something like 3 x 1125mL bottles of Booze AND 4.5 L of wine OR Beer per person, Port also counts as fortified wine so is not part of your 3 bottle limit! :D. the thing to remember is that the law states you can take 1 bottle of spirits so you must declare the extra 2 but it is ok as long as you have declared it.
