I use the knee for a few things.

1. A windsock when braking and tipping in.
2. A third brake (I grind the fecker into the ground going into southern loop and use it as part of the slowing down process)
3. A guide as to lean angle
4. A tripod to pick the bike up if the front goes. (I must point out though, that I can't always manage to save a front end slide with it, just if I catch it in the early part of the slide. otherwise, I use it to slide along on when I have crashed  )
5. Cause it looks rooly rooly cool!

On the road, my arse rarely moves off the centre of the seat. Unless of course, I make a mistake and come into a corner too hot and need a little more turn without leaning the bike further. Or...If I'm trying to pass Wattie, Phil, Gos et al!!!!!!!

You can be booked in NSW for a knee on the deck its called not in control of vehicle, ie having your ass of the bike.
Same as 1 hand on bars , 1 foot on pegs, standing up or doing a head stand on the seat.
No shit this is a fact.

thats been changed Rod. You can have one hand off now. :D ;)

The other view is that if you get your arse off the seat then you can lean less which in turn means you can get on the gas harder and earlier. The side effect of getting off the seat is that you drag a knee.

As Blurr stated, the law is that you "must sit astride the motorcycle with at least one hand resting on the controls"

You can't be done for dragging a knee, but you can be done for shifting your arse off the seat!!! 8)

since when did "astride" mean "ass directly in middle of seat". Far as I can see the definition of astride is simply one leg either side. Besides, unless you're Andrew Bogat, how the hell do you get your ass OFF the seat AND not have both feet still on the pegs. My ass touches the side of the seat and thats good enough for me.
See here, young man,
From Walgett to the sea,
From Conroy's Gap to Castlereagh,
There's none can ride like me.

The key word in the letter of that law is the word "sit". Look that up and come back to me!!!!
