DON'T Go the Hume Highway! boring as batshit!
The Coast road is better but can get a bit of traffic and a lot of Cops
Monaro is ok as long as you don't spend too much time on it and keep the speed sensible(ish) when on it
the more detours you can take through the Snowies the more fun you'll have
the Bonang is FUN although there are some dirt sections
I generally take a pair of Undies for every day and a pair of socks for every 2nd day (but don't wear 'em 2 days consecutively

) a pair of Jeans for when I'm there and a T-Shirt and Long sleeve shirt, Jumper ... remember it's Phillip Island so it could be 40 degrees or 4 degrees!
and take a pair of shoes that you can wear around the track so you don't have to clomp around in your bike boots, but make sure they will be ok in Mud (see point above)
Also take a good waterproof jacket (probably a Bike Jacket) and I usually take a good hat to keep the sun off me and a good beanie to keep the snow off me!
Toilet bag full of the usual stuff, and a puncture repair kit, Gaffa tape, electrical tape, cable ties and spare levers .... front brake and clutch, you don't want your whole trip ruined 'cos the bike fell off the sidestand in bumphuck Victoria and you now have no Clutch lever!
If you've packed all this and still have room throw in a first Aid kit!
Most importantly ... Pack a sense of humour! it's amazing what you put up with if you have that!
