Very simply, tell them to look where they want to go, the head controls the shoulders and body. I have heard people say lean with the bike, but that is being reactionary, if they are looking where the intended direction of the bike will travel than they are being proactive as they will actually be looking through the corner and putting weight on the inside of the bike making it easier to turn in.

Some pillion seats are slippery so look at some aftermarket additions that stop the pillion from sliding into the back of you, you don't want them impeding on your capacity to steer the bike

Correct but you may want to be turned around or better still being pillion and "holding" as only one would
