I'd love that time free with no commitments I'd be going to gigs, cafes, restaurants, shows, the more "alive" night spots, here's a few ideas:
-If you're into music pickup a "Drum Media" from a guitar/cd store etc for gig guide.
-Rock gig at the Annandale Hotel
-China town for dinner one night we like a place called Kung Fu Ramen near Market City.
-Arthouse hotel, jazz, djs, tapas etc
-Opera Bar under the walk bridge side of the opera house
-Auburn for a good middle eastern feed - Mado cafe, or bankstown but a longer trip
-Kings Cross if you want trendy bars, nightclubs etc, or gay bars

-Bondi at night on a warm night, and during the day if you get a chance.
-Catch the ferry to Manly from circular quay, best around sunset.
-Church St Parramatta for a million restaurants and cafes... can catch the ferry here too.
-The Basement near Circular Quay - cool venue with cool gigs, blues, jazz, latin, etc
-King St Newtown - funky young area.
-Strathfield for a good korean feed.
-Walk/Jog from Bondi beach heading south as far as you want until you need to turn around it's beautiful.
-That hotel in annandale on the corner of johnson st and parramatta rd for blues, can't remember its name and I used to play there
