I'm thinking the trackbike has done a waterpump seal, how do I tell and what's the estimated repair bill.

Water and oil mixing. It's in a side cover, can be done yourself so seal, gasket maybe a water pump and your time. May not need a new pump, depending on how hot it's been allowed to get.

I've made sure it's never been hotter than three bars on the temp scale. Sightglass has white in it and when I open the throttle, it's like it's starving of fuel and the engine nearly cuts out.
Has anyone got a step by step on how to change a water pump or seal?

If it's breaking down and you have water in the oil, then it sounds like it's done a head gasket more so than a water pump. Might be pumping water into the chamber?
