It doesn't know. The answer is always equivalent to a multiple of 9. It changes the symbols each time, but the symbol for 9, 18, 27... is the same. Do it without even thinking of a number and the symbol is always the 9. You can't beat it.

When you add the separate numbers from any two digit numbers you always get a number divisible by 9.
For example:
72 - (7 + 2) = 63....which is divisible by 9.
49 - (4 + 9) = 36....ditto
98 - (9 + 8 ) = 81....I'm sure you get the idea
.
Every symbol in the table that is divisible by nine is the same...
...and they change the table of symbols every time you try it otherwise you'd twig immediately.
