The one thing i would suggest is to replace as many o-rings within the carbs as possible, especially those in the idle needle & the choke..
Also zeroing everything (Float height, needle jets) to base settings is a good idea. I would also consider removing the emulsion tubes and the jets and giving them a good clean out as well.

OK, I was quite confident that the carbies were the problem; and they were. I took the f*&^ers out and replaced them with some used ones from a '07 GPX.
Now she starts first time without choke (needs a little choke to idle when cold), revs are responding perfectly and no problems with power. Better then she was before
Thanks everyone for all your help, input and advice. I'm sure if i had persisted more with this problem and been willing to spend more money and time on it, I would've fixed the old carbies, but i was running out of patience :S Hoping to go out on some group rides very soon with Melbourne folks
