back in the day when i had a capable 4x4 we used to do the watagans run quite often. Lots of fun for the spirited 4wder and some good camp sites early on for the not so keen. Watch out for the deep muddy ruts after long periods of rain as i almost lost a 4x4 in what seemed to be a shallow puddle... Id be keen but with no 4x4 anymore i wont be taking the family wagon along for a beating. Oh yes, take warm clothes

FWIW we went to Wombean caves during summer school holidays (Jan) this year.
there were no noisy yahoos, and suprisingly few people there for what I would think was a peak time.
Only thing is you will have to bring in all firewood, as they don't supply any. (except in the "lounge", I think)
Any places around Lake Macquarie maybe? +1 for the fishing

OK, it looks like there's two different groups / two different interests here. Some want to go somewhere more remote (i.e, not where every man and his dog can go) and some want to go somewhere more accessible.
Maybe two different events would be more appropriate, since one trip won't cover all requirements? Say, one 4WDing trip (that could include the bush or the sand dunes) and one fishing / camping trip that doesn't require 4WD (some of the vehicles mentioned don't seem to have much in the way 4WDability and would probably get bogged on the first sand dune or washout).

I went to the Wombeyan Caves yesterday, the rest of the people on my cave tour in the arvo were not going back over the 70 odd k's between there and Mittagong, they were going the long way through Taralga.
Whilst not a "full on4wd" track - I tell you what I was glad I was in one - and not a 2wd car. It has the added bonus of having cabins for those not so hard core - and we know there are some of them

- and the hard core alike. Also the caves are a great experience, I hadnt been there for near on 30 years. In regards to the road it is very narrow - one lane wide in some places - with a cliff as runn off if you fark up, lots of pot holes and the Ranger actually said it about as bad as it ever has been. We also saw roos, mountain goats and other wild life that made the drive interesting. To give you an idea the last 15 k's to the caves took us half an hour, its no WRC track thats for sure. Attached is a pic on the way back decending down into the valley to cross the Wollondilly River, you can see the road hugging the mountain side on the way down.
Depending on when this is on we may be up for it, not to keen to scratch the sides of my nice ute on trees or go bouncing it off rocks though

The Boss says Septemner and October are out for us

I wasn't interested in organising a 4WD trip that only had two or three cars (or worse, some fauxWD's getting stuck and damaged), or a camping/fishing trip that had half a dozen people bitching about not 4WDing!
Though, there's enough people with dirt bikes now that give it another year and we can probably add camping/dirt bike to the list, and have three different groups

How about camping, dirt biking and waterskiing...and of course extreme knitting for those brave enough.

We had the Jeep lifted and a hot tune put in just for this too..
Now, to please everyone....
We want somewhere that we can take the caravan (no, its not an off roader), ride dirt bikes (unregistered, so no national parks etc), not too difficult 4wd tracks as Jus won't want to scratch her Jeep, is kid friendly as our babysitters are away for a few months, is in close proximity to medical services as I'm not getting any younger and isn't too cold (see previous reason).....
(OK, we'll just stay at home then...

)
