What to do ?
If I have the chance of getting some boots online for nealy half price but they only have the size above and below the size of the boots I have now........ should I go up or down ? Or not risk it as they aren't the same brand and no-one seems to stock them so I can't try them on ????

go up...you can always wear a thicker sock
pinched feet and toes from a smaller boot is not too comfortable while riding
and the boots these days tend not to stretch (unlike any old leather boots which shrink and swell with moisture )

you can always add an ortho footbed and heel pads as well to a boot thats too big

Well, that solves that little problem. They've just sold the last pair of boots that were 1 size up, I think going 2 sizes up would be just too much.

I wouldn't go to a wrong size with boots. Too easy for them to come off when you need them to stay on and sizes change between brands just to make matters worse.
Probably a sign that they sold out of them.

if you've got the time check em out at a store that sells that brand try one size larger and test fit mit thick sox

What brand? Euro vs US vs Ruddville Republic of China is an issue too. But personally, there's a lot of stuff I'd buy online... and footwear isn't one of them. Baggy trousers is one thing; blisters and degloving wounds are something completely different. I'd buy boots on special from a local store, if price is an issue. You're going to spend a lot of time in those boots.
