Hey Pete,
I am currently running the Metzeler M5 front/Z8 rear combo & very happy, have run the earlier M3 & Z6 combo prior to a set of Pirelli Angels & I would say go the Metzelers.
Phil down here @ Norside will look after you, tell him I sent you if you ring for a price.

I have an 023 Bridgy on the back of the 'Busa, it had about 75% tread when I got the bike, 1500klms of mainly twisty backroads (hard to believe in Mackay I know, but I am keeping this thing off the main roads ) later & it as maybe 30% & I have been sorta gentle on it, still has not seen the dragstrip for fuqs sake.
