Whereas I applaud you in your quest to ressurect an old Kawasaki, in my (worthless) opinion (which I admit is worth jack) I think you may be opening yourself up to a money pit. AFAIK that model wasn't anything special and unless you can find the bits cheap and/or are willing to do the legwork finding stuff and the labour/hard yards putting it back together, then you may be severely overcapitalising.
Anyway, having said that I plan on doing much the same thing when my kids have started to fend for themselves, so good on you. A couple of the guys on here have the old GPX750R, some of which look in better condition than they would have rolled out of the factory

. It's good to have some type of hobby where you can get your hands dirty and get to ride the results.

http://www.findapart.com.au for the bits you are missing, though you may also need a bit of ringing around to find what you're after.
