I know the grease on the back of the pads is to stop noise under braking due to movement of the pad on the piston - just had copper grease on the mind at that time, and always use it when replacing pads.
I like the suggestion of the new pad touching a part of the rota the old pad didn't. This would suggest the noise, and will dissapate once the pad beds to the shape of the disc.
